Scallops in Cabidos sauce
Ingredients:
1 pound Sea Scallops
5 Tbsp. butter
2 cups '04 Cabidos
2 cloves garlic, finely chopped
Salt and pepper
Season Scallops with salt and pepper. In a large saute pan, melt 2 Tbsp butter over medium-high heat until the butter starts to foam. Add scallops in 1 layer and brown on one side without moving for 1 minute. Flip scallops and brown the other side 1 more minute. Remove scallops from pan. Add garlic to pan and stir for 30 seconds. Add Cabidos to pan and scrape up any browned bits from the bottom. Reduce Cabidos by half. Swirl in remaining 3 Tbsp of butter. Season sauce to taste with salt and pepper. Toss scallops back in pan and coat with sauce. Serve immediately with a cool glass of Cabidos. Enjoy!
