Roasted Cod with Rice, Shrimp and Home-Made Tartar Sauce
Serves 2 generously
You will need the following items:
For Sauce:
3 Tbsp. Mayonnaise
3 tsp sweet pickle relish
1 tsp Dijon mustard
2 tsp. chopped capers
a dash of white wine vinegar
½ chopped shallot
1 Tbsp. chopped parsley
1 tsp. lemon juice
a bit of grated lemon zest
a dash of cayenne
salt/pepper to taste
Combine all ingredients well and let sit for at least 30 minutes before serving. Can be kept refrigerated for up to 1 week.
For Fish:
1 ½ lbs fresh cod
6 fresh shrimp, shells left on!
Olive oil
Salt pepper
Paprika
About 6 cups cooked rice
Bay leaf
Lemon wedges for serving
Parsley for garnish
First you will need to preheat your oven to 350 degrees Fahrenheit and pour yourself something like a good Albarino. Then place your rice in a casserole dish and just rub the cod and the shrimp with a tiny bit of oil, salt and pepper and place atop your rice. Sprinkle the seafood with a bit of lemon, paprika and add a bay leaf to the dish (to be removed upon serving).
Now, bake it all, uncovered, for about 30 minutes (or until the fish has just turned opaque and is starting to pull apart and flake). The juices released while the fish was cooking will season and moisten the rice. Remove the dish from the oven and turn the broiler to high. Place the dish under the broiler for 2 minutes and remove. Let the fish rest 10 minutes, then serve atop rice and garnish with tartar sauce, lemon, parsley and shrimp. Enjoy!
